Ingredients:
- 3 ripe bananas, mashed
- 2 eggs
- 1 cup greek yogurt
- 1/3 cup honey
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions:
- preheat oven to 180°c (350°f) and grease or line a loaf pan.
- in a large bowl, mash the bananas until smooth.
- whisk in the eggs, greek yogurt, honey, and vanilla extract until well combined.
- in a separate bowl, mix the flour, baking soda, cinnamon, and salt.
- gradually add the dry ingredients to the wet mixture, stirring gently until just combined. do not overmix.
- pour the batter into the prepared loaf pan and smooth the top.
- bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- allow the loaf to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
