Ingredients:
- 4 cod fillets (thick, white cod)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 can (400 ml) full-fat coconut milk
- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
Instructions:
- Preheat oven to 180°C (350°F).
- Season cod fillets evenly with salt and pepper and place them in a baking dish.
- Heat olive oil in a skillet over medium heat. Sauté the onion until translucent, about 3–4 minutes.
- Add garlic and ginger; cook for 30 seconds until fragrant.
- Stir in coconut milk, lemon juice, and lemon zest. Simmer gently for 3–4 minutes.
- Pour the sauce over the cod fillets.
- Bake for 20–25 minutes, or until the fish flakes easily with a fork.
