Ingredients
- 4 slices of sourdough bread
- 1 ripe avocado, peeled, pitted, and sliced
- 1 large tomato, sliced
- 1 ball fresh mozzarella (or about 1 cup shredded mozzarella)
- 2 tablespoons butter (softened)
- Salt and pepper to taste
- Optional: fresh basil leaves or a drizzle of balsamic glaze for extra flavor
Directions
- Prep the ingredients: Slice the avocado, tomato, and mozzarella. Pat the tomato slices dry with a paper towel to avoid soggy bread.
- Assemble the sandwiches: Lay out the sourdough slices. On two slices, layer mozzarella, avocado slices, and tomato. Season lightly with salt and pepper. Add basil or a drizzle of balsamic glaze if desired. Top with the remaining bread slices.
- Butter the bread: Spread a thin layer of softened butter on the outside of each sandwich.
- Grill: Heat a skillet or grill pan over medium heat. Place the sandwiches butter-side down and cook for 3–4 minutes per side, pressing slightly, until golden brown and the cheese is melted. Flip carefully and cook the second side.
- Serve: Remove from the pan, let rest for 1 minute, then slice in half and enjoy the gooey, flavorful goodness!
