Avocado, Mozzarella, and Tomato Grilled Cheese

 Ingredients

  • 4 slices of sourdough bread
  • 1 ripe avocado, peeled, pitted, and sliced
  • 1 large tomato, sliced
  • 1 ball fresh mozzarella (or about 1 cup shredded mozzarella)
  • 2 tablespoons butter (softened)
  • Salt and pepper to taste
  • Optional: fresh basil leaves or a drizzle of balsamic glaze for extra flavor

Directions

  1. Prep the ingredients: Slice the avocado, tomato, and mozzarella. Pat the tomato slices dry with a paper towel to avoid soggy bread.
  2. Assemble the sandwiches: Lay out the sourdough slices. On two slices, layer mozzarella, avocado slices, and tomato. Season lightly with salt and pepper. Add basil or a drizzle of balsamic glaze if desired. Top with the remaining bread slices.
  3. Butter the bread: Spread a thin layer of softened butter on the outside of each sandwich.
  4. Grill: Heat a skillet or grill pan over medium heat. Place the sandwiches butter-side down and cook for 3–4 minutes per side, pressing slightly, until golden brown and the cheese is melted. Flip carefully and cook the second side.
  5. Serve: Remove from the pan, let rest for 1 minute, then slice in half and enjoy the gooey, flavorful goodness!
