Apple Cinnamon Cottage Cheese Breakfast Bowls

Ingredients:

  • 2 large apples, peeled, cored, and diced
  • 1 cup cottage cheese
  • ½ cup rolled oats
  • ¼ cup honey or maple syrup
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 large eggs
  • ¼ cup milk (dairy or plant-based)
  • ¼ cup chopped walnuts (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease four small oven-safe bowls or ramekins.
  2. In a large bowl, mix cottage cheese, oats, honey or maple syrup, cinnamon, vanilla, and salt.
  3. Add eggs and whisk until fully incorporated.
  4. Stir in diced apples and milk until evenly combined.
  5. Divide the mixture evenly among prepared bowls.
  6. Top with walnuts, if using.
  7. Place bowls on a baking sheet and bake for 25–30 minutes, until set and lightly golden.
  8. Let cool slightly and serve warm.
