Ingredients:
- 1 lb sea scallops, patted dry
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- Juice and zest of 1 lime
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
- Lime wedges for serving
Instructions:
- Pat scallops completely dry and season both sides with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat until hot and sizzling.
- Add scallops in a single layer (do not overcrowd). Sear for 1½–2 minutes per side, until golden and slightly crisp. Remove from pan and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds. Stir in lime juice, zest, and chopped cilantro.
- Return scallops to the pan, tossing gently to coat with the sauce.
- Serve immediately with extra lime wedges and a drizzle of sauce from the pan.
Tip: Perfect with jasmine rice or roasted vegetables!
