Strawberry Cheesecake Cookies

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup freeze-dried strawberries, chopped (or finely chopped fresh strawberries)

Instructions:

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients:
    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream butter and cream cheese:
    In a large bowl, beat the softened butter and cream cheese until smooth and creamy. Add the granulated sugar and brown sugar, and beat until light and fluffy.
  4. Add egg and vanilla:
    Beat in the egg and vanilla extract until combined.
  5. Combine dry and wet ingredients:
    Gradually add the dry ingredients to the wet mixture, mixing until just combined. Gently fold in the chopped strawberries.
  6. Shape and bake:
    Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing about 2 inches apart. Bake for 12–14 minutes, until the edges are lightly golden but the centers remain soft.
  7. Cool and serve:
    Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
