Snickerdoodle Pumpkin Bread

Ingredients:

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract

For the Cinnamon Sugar Topping:

  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
    In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  2. In another bowl, beat the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
    Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  3. Pour the batter into the prepared pan. Mix the cinnamon-sugar topping and sprinkle it evenly over the batter.
    Bake for 50–60 minutes or until a toothpick inserted comes out clean.
