Virginia’s Fresh Apple Cake

Ingredients:

  • 1½ cups oil
  • 2 cups sugar
  • 3 cups plain flour
  • 2 large eggs
  • 1½ tsp baking soda
  • 1 tsp salt
  • 2 tsp vanilla
  • 1 cup white raisins
  • 1 cup chopped pecans
  • 3 cups cut-up fresh apples
  • ½ cup coconut
  • ½ cup red cherries, cut up
  • ¼ tsp cinnamon
  • ⅛ tsp cloves
  • ⅛ tsp nutmeg

Instructions:

1. Mix all ingredients together until well combined.
2. Pour into a greased baking pan.
3. Bake at 325°F (163°C) for 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean.
