Ingredients

1 bell pepper

½ onion

1 spoonful crushed garlic

2 lbs ground beef

2 boxes Jiffy cornbread mix (or any brand you prefer)

1 can corn, drained

1 can pinto or black beans, drained

1 can Rotel (heat level of your choice)

Salt, to taste

Shredded cheese, for layering

Salsa and/or sour cream, for serving
Directions

Sauté the bell pepper and onion in a skillet until the onion becomes translucent.

Add the ground beef and salt, and cook until completely browned.

Stir in the garlic just long enough to heat it through (do not burn it).

Add the corn, beans, and Rotel. Stir and let the mixture heat through while preparing the cornbread batter according to the package directions.

Pour the beef mixture into a large baking dish and add a layer of shredded cheese.

Pour the cornbread batter on top and spread evenly.

Bake at the temperature indicated for the cornbread mix until golden and cooked through.

Serve warm with salsa and/or sour cream.
