Ingredients:
- 1 box yellow cake mix (plus ingredients listed on the package, usually eggs, oil, and water)
- 1 (8 oz) package cream cheese, softened
- 1/2 cup granulated sugar
- 1 1/2 cups fresh strawberries, hulled and sliced
- 1/2 cup sweetened shredded coconut (optional)
- 1/2 cup chopped pecans or walnuts (optional)
- 1/2 cup unsalted butter, melted
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- Prepare the yellow cake mix according to the package instructions and pour the batter into the greased pan.
- Sprinkle the sliced strawberries evenly over the batter. Add coconut and nuts if using.
- In a bowl, beat together the softened cream cheese and granulated sugar until smooth. Drop spoonfuls of this mixture evenly over the cake batter.
- Drizzle the melted butter across the top.
- Bake for 40–45 minutes, or until the edges are golden and the center is set (the cake will have a cracked, “earthquake” look).
- While the cake cools slightly, whisk together powdered sugar, vanilla extract, and 2–3 tablespoons of milk to make a glaze.
- Drizzle the glaze over the warm cake. Let cool before slicing.
