Banana Bread Cookies

Ingredients:

  • 1 ripe banana
  • ½ cup (about 100 g) granulated sugar
  • ¼ cup (about 60 g) melted butter (cooled slightly)
  • 1 cup (about 125 g) all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt

Instructions:

  1. Preheat oven to 350 °F (175 °C). Line a baking sheet with parchment paper.
  2. In a large bowl, mash the banana with a fork until mostly smooth (a few small chunks are fine).
  3. Add the sugar and melted (cooled) butter to the banana and mix well.
  4. Add the flour, baking soda, and salt. Stir until just combined — do not overmix.
  5. Drop spoonfuls of dough onto the prepared baking sheet, leaving about 2 inches (5 cm) between each. Flatten slightly with a fork for even baking.
  6. Bake for 10–12 minutes, until the edges are lightly golden but the centers are still soft.
  7. Let cool on the baking sheet before transferring.
