Lazy Man Peach Cobbler

Ingredients:

  • 1 stick butter or margarine (½ cup / 115 g)
  • 1 cup (240 ml) milk
  • 1 cup (200 g) granulated sugar
  • 1 cup (125 g) all-purpose flour
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 1 can (15 oz / 425 g) peaches in syrup, with juice
  • ½ teaspoon ground cinnamon (optional)

Instructions:

  1. Preheat oven to 350°F (180°C).
  2. Place butter in a 9×13 inch (or similar) baking dish and set it in the oven to melt.
  3. In a mixing bowl, combine sugar, flour, baking powder, and salt. Stir in milk until smooth.
  4. Pour batter over the melted butter in the baking dish—do not stir.
  5. Evenly spoon the peaches and their syrup over the batter. Do not mix. The batter will rise during baking, creating a golden crust around the fruit.
  6. Sprinkle with cinnamon if desired.
  7. Bake for 40–45 minutes, until the top is golden brown and slightly crisp.
  8. Serve warm, ideally with a scoop of vanilla ice cream.
