Deep-Fried Shrimp Alfredo Burrito Bites

Ingredients:

  • – 1 pound shrimp, peeled and devine
  • – 1 cup Alfredo sauce
  • – 4 large flour tortillas
  • – 1 cup shredded mozzarella cheese
  • – 1/2 cup breadcrumbs
  • – 2 eggs, beaten
  • – Oil for frying
  • – Salt and pepper to taste

Directions:

  1. – In a bowl, mix the shrimp with salt, pepper, and Alfredo sauce. Set aside.
  2. – Place a tortilla on a flat surface and spoon some of the shrimp mixture in the center.
  3. – Sprinkle mozzarella cheese on top of the shrimp mixture.
  4. – Fold the sides of the tortilla over the filling and roll it up tightly.
  5. – Dip each burrito in the beaten eggs, then roll in breadcrumbs to coat.
  6. – Heat oil in a deep pan over medium heat. Once hot, carefully place the burrito bites in the oil.
  7. – Fry until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.
  8. – Serve warm with additional Alfredo sauce for dipping.
