Ingredients:
- – 1 pound shrimp, peeled and devine
- – 1 cup Alfredo sauce
- – 4 large flour tortillas
- – 1 cup shredded mozzarella cheese
- – 1/2 cup breadcrumbs
- – 2 eggs, beaten
- – Oil for frying
- – Salt and pepper to taste
Directions:
- – In a bowl, mix the shrimp with salt, pepper, and Alfredo sauce. Set aside.
- – Place a tortilla on a flat surface and spoon some of the shrimp mixture in the center.
- – Sprinkle mozzarella cheese on top of the shrimp mixture.
- – Fold the sides of the tortilla over the filling and roll it up tightly.
- – Dip each burrito in the beaten eggs, then roll in breadcrumbs to coat.
- – Heat oil in a deep pan over medium heat. Once hot, carefully place the burrito bites in the oil.
- – Fry until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.
- – Serve warm with additional Alfredo sauce for dipping.
