Ingredients:
- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup fresh cilantro, chopped
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 teaspoon red curry paste
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon vegetable oil
Directions :
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, cilantro, green onions, garlic, ginger, soy sauce, fish sauce, lime juice, red curry paste, salt, and black pepper. Mix until well combined.
- Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place the meatballs on the prepared baking sheet, spaced evenly apart.
- Drizzle the vegetable oil over the meatballs to help them brown. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown.
- Serve the meatballs warm with a side of rice or noodles, and garnish with additional cilantro and lime wedges if desired.
