Heavenly Moist Fruitcake

Ingredients :

  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup mixed dried fruit (raisins, currants, chopped apricots, etc.)
  • 1/2 cup chopped nuts (walnuts, pecans, etc.)
  • 1/2 cup orange juice

Directions :

  1. Prep:
    Preheat oven to 325°F (165°C). Grease loaf pan.

  2. Cream Base:
    Beat butter + sugar in stand mixer until fluffy (~3 mins). Add eggs one at a time; blend in vanilla.

  3. Dry Mix:
    Sift flourbaking powderbaking sodasaltcinnamonnutmeg.

  4. Combine:
    Gradually add dry mix to wet; mix until just combined.

  5. Fold-ins:
    Fold in dried fruitnuts, then orange juice with spatula.

  6. Bake:
    Pour batter into pan. Bake 70-80 mins. Cool 10 mins in pan → transfer to cooling rack.
