NO-BAKE PUMPKIN CHEESECAKE BALLS

Ingredients:

  • 8 oz cream cheese, softened
  • 1 cup pumpkin puree
  • 1 ½ cups graham cracker crumbs (plus extra for rolling)
  • 2 tsp pumpkin pie spice
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
    White chocolate (optional, for drizzling)

Directions:

  1. Mix Filling:
    Beat cream cheesepumpkin puréepowdered sugarpumpkin spice, and vanilla until smooth.

  2. Add Crunch:
    Fold in graham crumbs until combined.

  3. Shape & Coat:
    Scoop mixture with cookie scoop. Roll into balls; coat in extra crumbs.

  4. Chill:
    Place on parchment-lined baking sheet. Refrigerate ≥1 hour.

  5. Finish:
    Optional: Drizzle melted white chocolate.
