Cajun Garlic Butter Chicken Penne in Creamy Parmesan Sauce

Ingredients :

For the Chicken:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1½ tsp Cajun seasoning (adjust to taste)
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced

For the Pasta & Sauce:

  • 12 oz penne pasta
  • 1½ cups heavy cream
  • ½ cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • ½ tsp chili flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions :

  1. Cook Pasta:
    Boil penne in salted water until al dente. Drain; reserve ½ cup pasta water.

  2. Sear Chicken:
    Toss chicken with Cajun seasoningpaprika, salt, and pepper. Heat olive oil + 1 tbsp butter in skillet over med-high. Sear chicken 6-7 mins.

  3. Garlic Butter Finish:
    Push chicken aside. Add garlic + remaining butter; sauté 30 secs. Remove chicken.

  4. Make Sauce:
    Pour cream and broth into skillet; simmer. Whisk in grated Parmesan and mozzarella until melted. Add chili flakes (optional).

  5. Combine:
    Toss pasta + chicken in sauce with tongs. Garnish with parsley.
