Ingredients:
- 6 chicken thighs (bone-in, skin-on)
- 800g (1.75 lbs) baby potatoes, halved or quartered
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1 tbsp fresh rosemary (or 1 tsp dried)
- 1 tsp thyme
- 1 tsp paprika
- Salt & pepper, to taste
- Juice of 1 lemon (optional for extra flavor)
Instructions:
- Preheat oven to 200°C (400°F).
- Season chicken with olive oil, garlic, rosemary, thyme, paprika, salt, and pepper.
- Toss potatoes with olive oil, salt, and pepper.
- Arrange chicken and potatoes on a baking tray.
- Bake for 40–45 minutes, or until chicken reaches 74°C (165°F) and skin is crispy.
- Optional: Squeeze fresh lemon juice over before serving.
