Oven-Baked Chicken Thighs with Potatoes

Ingredients:

  • 6 chicken thighs (bone-in, skin-on)
  • 800g (1.75 lbs) baby potatoes, halved or quartered
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary (or 1 tsp dried)
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt & pepper, to taste
  • Juice of 1 lemon (optional for extra flavor)

Instructions:

  1. Preheat oven to 200°C (400°F).
  2. Season chicken with olive oil, garlic, rosemary, thyme, paprika, salt, and pepper.
  3. Toss potatoes with olive oil, salt, and pepper.
  4. Arrange chicken and potatoes on a baking tray.
  5. Bake for 40–45 minutes, or until chicken reaches 74°C (165°F) and skin is crispy.
  6. Optional: Squeeze fresh lemon juice over before serving.
