Southern Sausage Biscuits

Ingredients:

2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cubed
3/4 cup buttermilk (plus extra if needed)
1/2 pound breakfast sausage, cooked and crumbled
1/2 cup shredded cheddar cheese (optional)

Instructions:

  1.  Preheat your oven to 425°F (220°C).
  2.  In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3.  Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4.  Stir in the cooked sausage and shredded cheese (if using).
     Add the buttermilk and gently stir just until the dough comes together. Don’t overmix.
  5.  Turn the dough onto a floured surface and gently pat it into a 1-inch thick rectangle.
  6.  Cut biscuits using a biscuit cutter or a glass. Place them on a baking sheet lined with parchment paper.
  7.  Bake for 12–15 minutes or until golden brown on top.
     Serve warm perfect on their own or with gravy!
