Ingredients:
Peanut Butter Cookies:

1 cup (2 sticks) unsalted butter, softened

¾ cup creamy peanut butter

¾ cup granulated sugar

¾ cup packed brown sugar

1 large egg

1 tsp vanilla extract

2 cups all-purpose flour

½ tsp baking soda

¼ tsp salt
Marshmallow Filling:

3 cups mini marshmallows
-
2 tbsp creamy peanut butter
-
1 tsp vanilla extract
Optional Coating:

½ cup crushed graham crackers
-
¼ cup melted chocolate
Instructions:

Make Dough:
Beat butter, peanut butter, sugars until fluffy → add egg + vanilla.
Whisk flour, baking soda, salt → mix into wet ingredients.
Chill dough 30 mins in glass mixing bowl. -
Bake Cookies:
Roll dough into 1″ balls → place on parchment-lined baking sheet.
Flatten slightly → bake at 350°F (175°C) 10-12 mins.
Cool completely on wire rack. -
Prepare Filling:
Mix marshmallows, peanut butter, vanilla until combined. -
Assemble Sandwiches:
Spread filling on cookie → top with second cookie. -
Optional Finish:
Roll edges in crushed graham crackers → drizzle with melted chocolate.
