Ingredients:
For the meatloaf:
- 1½ lbs ground beef (80/20 recommended)
- 8 slices bacon, cooked and crumbled
- 1 cup shredded sharp cheddar cheese
- ½ cup breadcrumbs
- ¼ cup ketchup
- ¼ cup yellow mustard
- 2 tablespoons Worcestershire sauce
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 eggs, beaten
- Salt and black pepper to taste
For the glaze:
- ½ cup ketchup
- 1 tablespoon mustard
- 2 tablespoons brown sugar
Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper. Alternatively, shape the meatloaf by hand and place on a foil-lined baking sheet.
- In a large mixing bowl, combine all meatloaf ingredients: ground beef, bacon, cheddar cheese, breadcrumbs, ketchup, mustard, Worcestershire sauce, onion, garlic, eggs, salt, and pepper. Mix until just combined don’t overmix.
- Transfer the meat mixture into the loaf pan or onto the baking sheet and shape into a loaf. Bake uncovered for 35–40 minutes.
- While the meatloaf is baking, mix the glaze ingredients (ketchup, mustard, brown sugar) in a small bowl.
- After the initial bake time, remove the meatloaf from the oven and spread the glaze on top. Return it to the oven and bake for another 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing to allow the juices to redistribute.
