Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup cornstarch
- 2 eggs, beaten
- 1/4 cup soy sauce
- 1/4 cup orange juice
- 1/4 cup sugar
- 2 tbsp rice vinegar
- 1 tbsp cornstarch mixed with 2 tbsp water
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 2 cups vegetable oil for frying
Directions:
1. Coat Chicken: Dredge chicken pieces in cornstarch, then dip in beaten eggs.
2. Fry Chicken: Heat vegetable oil in a large skillet over medium-high heat. Fry chicken pieces until golden brown and crispy. Remove and drain on paper towels.
3. Make Sauce: In a saucepan, combine soy sauce, orange juice, sugar, rice vinegar, garlic, and ginger. Bring to a boil. Add cornstarch mixture and cook until thickened.
4. Combine: Toss fried chicken pieces in the sauce until well coated.
