Pepperoni Pizza Quesadillas

Ingredients:

For the quesadillas:

  • 1 tsp olive oil or butter
  • ¼ cup yellow onion, diced
  • 4 medium flour tortillas
  • ¾ cup shredded mozzarella cheese
  • ¼ cup mini pepperoni slices (or chopped regular pepperoni)
  • ¼ cup pizza sauce (plus extra for dipping)
  • 1 tbsp chopped fresh basil or ½ tsp dried Italian seasoning (optional)

Directions:

  1. Sauté the onions: In a medium skillet over medium heat, add the olive oil or butter. Once hot, sauté the diced onions for about 2–3 minutes until softened and slightly golden. Remove them from the skillet and set aside.
  2. Assemble the quesadillas: Lay out two of the tortillas. Spread about 2 tablespoons of pizza sauce on each. Sprinkle a layer of shredded mozzarella over the sauce, then add the sautéed onions and pepperoni. If you’re using basil or Italian seasoning, sprinkle that on top. Cover each with the remaining tortillas.
  3. Cook the quesadillas: Wipe out the skillet and return it to medium heat. Add a tiny drizzle of oil or a light coating of butter. Place one quesadilla in the pan and cook for 2–3 minutes per side, pressing gently with a spatula, until the tortilla is golden and crisp and the cheese is fully melted. Repeat with the second quesadilla.
  4. Slice and serve: Let them cool slightly before slicing into quarters. Serve warm with extra pizza sauce for dipping!
