Ingredients:
- 4 boneless, skinless chicken breasts
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon olive oil
- 1 cup Caesar dressing (store-bought or homemade)
- 1 bunch fresh asparagus, trimmed
- 1/2 cup shredded mozzarella or Parmesan cheese (optional for extra cheesiness!)
Directions:
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish large enough to fit the chicken and asparagus side by side.
- Season the chicken with salt and black pepper on both sides.
- Sear the chicken: Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and sear for 2–3 minutes on each side, just until lightly golden. You’re not cooking them through—just building flavor!
- Arrange in the baking dish: Place the seared chicken breasts in the baking dish. Pour the Caesar dressing evenly over the top of the chicken.
- Add the asparagus: Arrange the asparagus spears around the chicken. If you like your asparagus soft, tuck them under the dressing slightly. For a crisper finish, keep them on top.
- Top with cheese (optional): Sprinkle shredded mozzarella or Parmesan over the chicken and asparagus for a cheesy golden crust.
- Bake: Place in the oven and bake uncovered for 25–30 minutes, or until the chicken is cooked through (internal temp of 165°F or 74°C) and the asparagus is tender.
- Serve: Let it rest for a few minutes, then plate it up with a spoonful of those creamy juices. Goes beautifully with roasted potatoes or garlic rice!
