- 8 oz rotini, penne, or any short pasta of your choice
- 1 cup cooked shrimp, peeled and deveined
- 1 cup lump crab meat (fresh, canned, or imitation)
- 1/2 cup chopped celery
- 1/2 cup cherry tomatoes, halved
- 1/4 cup diced red onion
For the Dressing:
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice (freshly squeezed is best!)
- 1 tablespoon Dijon mustard
- Salt and black pepper, to taste
Directions:
- Cook the pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool it quickly and stop the cooking process. Set aside. - Make the dressing:
In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, and pepper until smooth and well combined. Adjust seasoning to taste. - Combine the salad:
In a large mixing bowl, add the cooled pasta, shrimp, crab meat, chopped celery, cherry tomatoes, and diced red onion. - Add the dressing:
Pour the dressing over the salad and gently toss to coat everything evenly. Make sure not to break up the delicate crab meat too much. - Chill before serving:
Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld. Serve chilled with a wedge of lemon or a sprinkle of fresh herbs if desired.
