Seafood Pasta with Shrimp & Crab

Ingredients:

  • 8 oz rotini, penne, or any short pasta of your choice
  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup lump crab meat (fresh, canned, or imitation)
  • 1/2 cup chopped celery
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced red onion

For the Dressing:

  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice (freshly squeezed is best!)
  • 1 tablespoon Dijon mustard
  • Salt and black pepper, to taste

Directions:

  1. Cook the pasta:
    Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool it quickly and stop the cooking process. Set aside.
  2. Make the dressing:
    In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, and pepper until smooth and well combined. Adjust seasoning to taste.
  3. Combine the salad:
    In a large mixing bowl, add the cooled pasta, shrimp, crab meat, chopped celery, cherry tomatoes, and diced red onion.
  4. Add the dressing:
    Pour the dressing over the salad and gently toss to coat everything evenly. Make sure not to break up the delicate crab meat too much.
  5. Chill before serving:
    Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld. Serve chilled with a wedge of lemon or a sprinkle of fresh herbs if desired.
