Soft Ginger Spice Cookies

Ingredients :

    • 1½ sticks (12 tablespoons) salted butter, at room temperature
    • 1 cup packed brown sugar
    • 1 large egg
    • 1/4 cup molasses
    • 2¼ cups all-purpose flour
    • 1 teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground ginger
    • 1/2 teaspoon ground cloves
    • 1/4 teaspoon salt
    • 1/4 cup granulated sugar (for rolling)

    Directions:

    1. Preheat oven: Set your oven to 350°F (175°C) and line two baking sheets with parchment paper.
    2. Cream butter and sugar: In a large bowl, beat the butter and brown sugar together until light and fluffy, about 2–3 minutes.
    3. Add wet ingredients: Beat in the egg and molasses until fully combined and smooth.
    4. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
    5. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
    6. Shape and roll: Scoop tablespoon-sized portions of dough, roll into balls, and coat in granulated sugar.
    7. Bake: Place dough balls 2 inches apart on the prepared baking sheets. Bake for 9–11 minutes, until the edges are set but the centers are still soft.
    8. Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. They’ll continue to set as they cool, staying perfectly soft and chewy.
