- 1½ sticks (12 tablespoons) salted butter, at room temperature
- 1 cup packed brown sugar
- 1 large egg
- 1/4 cup molasses
- 2¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/4 cup granulated sugar (for rolling)
Directions:
- Preheat oven: Set your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream butter and sugar: In a large bowl, beat the butter and brown sugar together until light and fluffy, about 2–3 minutes.
- Add wet ingredients: Beat in the egg and molasses until fully combined and smooth.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
- Combine: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Shape and roll: Scoop tablespoon-sized portions of dough, roll into balls, and coat in granulated sugar.
- Bake: Place dough balls 2 inches apart on the prepared baking sheets. Bake for 9–11 minutes, until the edges are set but the centers are still soft.
- Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. They’ll continue to set as they cool, staying perfectly soft and chewy.
