How to make this yummy Chicken Cobbler!!

Ingredients :

  • For the base:
  • ½ cup unsalted butter, melted
  • 3½ to 4 cups shredded rotisserie chicken (white and dark meat)
  • 20 oz frozen mixed vegetables (corn, peas, and carrots)

For the biscuit topping:

  • 11.36 oz box Red Lobster Cheddar Bay Biscuit Mix (including the seasoning packet)
  • 2 cups whole milk

For the savory gravy:

  • 2 cups chicken stock
  • 10.5 oz can cream of chicken soup
  • ½ tsp seasoned salt (Lowry’s brand)
  • ½ tsp garlic powder
  • ¼ tsp black pepper

Instructions : 

  1. Preheat the oven: Set your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Layer the butter: Pour the melted butter into the bottom of the baking dish and tilt it gently to coat the base evenly. This forms a golden, flavorful base.
  3. Add chicken and veggies: Evenly spread the shredded rotisserie chicken over the butter layer. Then sprinkle the frozen mixed vegetables on top. No need to thaw the veggies—just use them straight from the freezer.
  4. Make the biscuit batter: In a mixing bowl, combine the Cheddar Bay Biscuit Mix and the enclosed seasoning packet with 2 cups of whole milk. Stir just until smooth—don’t overmix. Pour this gently over the chicken and veggies, but do not stir. This layering is what gives the cobbler its signature texture.
  5. Prepare the gravy layer: In a separate bowl, whisk together the chicken stock, cream of chicken soup, seasoned salt, garlic powder, and black pepper until smooth. Slowly pour this mixture over everything in the dish—again, do not stir.
  6. Bake: Place the dish in the preheated oven and bake for 45 to 50 minutes. You’ll know it’s done when the top is golden brown and bubbling at the edges. Let it rest for 10 minutes before serving to allow the layers to settle.
  7. Serve warm: Spoon into bowls or serve as generous squares—it’s creamy, savory, and packed with flavor in every bite!
