Ingredients :
- For the filling:
- 4 cups fresh or frozen pitted cherries
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 2 tbsp cornstarch
For the cobbler topping:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup whole milk
- 1/2 tsp vanilla extract
- Optional: 1 tbsp coarse sugar for sprinkling
Instructions :
- Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
- In a saucepan, combine cherries, sugar, lemon juice, and cornstarch. Cook over medium heat until thick and bubbly, about 5–7 minutes. Pour into baking dish.
- In a bowl, mix flour, sugar, baking powder, and salt. Cut in the cold butter until crumbly.
- Stir in milk and vanilla just until combined.
- Drop spoonfuls of the batter over the cherry mixture, leaving space for bubbling. Sprinkle with coarse sugar if using.
- Bake for 35–40 minutes until golden and bubbly.
- Cool for 10–15 minutes before serving. Best enjoyed warm.
