2 lbs Yukon Gold potatoes

1 cup sharp white cheddar
Flavor Base:
- 1 packet Hidden Valley Ranch Mix
- ½ cup whole milk
- ¼ cup European butter
- 1 sweet onion
- 2 cloves roasted garlic
- ½ cup fresh chives
Instructions :

Prep:
Preheat oven to 375°F.
Thinly slice smoked sausage.
Dice potatoes into ½” cubes. -
Sear Sausage:
Brown sausage in cast iron skillet over medium heat. Remove. -
Sauté Aromatics:
In same skillet, cook diced onion + minced garlic until soft. -
Combine:
In bowl, mix:-
Potatoes
-
Sausage
-
Onion/garlic
-
Shredded cheddar
-
Ranch mix
-
Milk
-
Melted butter
-
S&P
-
-
Bake:
Transfer to greased ceramic baker.
Cover with foil → bake 60 mins.
Uncover → bake 15 mins until golden. -
Garnish:
Top with fresh chives.
