Prime Rib recipe for Christmas

Ingredients :

  • USDA Prime Rib Roast (6-8 lbs, bone-in)
  • 2 tbsp Extra Virgin Olive Oil
  • Flaky Sea Salt (to taste)
  • Tellicherry Black Peppercorns (freshly cracked)
  • Garlic Cloves (optional)

Instructions : 

  1. Prep:
    Preheat oven to 500°F (260°C).
    Pat roast dry → place on wire rack in roasting pan.

  2. Season:
    Rub with olive oil.
    Generously coat with sea salt + cracked pepper.
    Optional: Insert slivered garlic cloves into meat.

  3. Sear:
    Roast uncovered at 500°F for 15 mins → forms golden crust.

  4. Roast:
    Reduce heat to 325°F (160°C).
    Insert meat thermometer into thickest part (avoid bone).
    Roast until internal temp reaches:

    • 135°F (57°C) for medium-rare

    • 140°F (60°C) for medium
      *(Approx 15 mins/lb)*

  5. Rest & Serve:
    Remove at 5°F below target temp (temp rises while resting).
    Tent loosely with foil → rest 20-30 mins.
    Slice with carving knife → serve au jus.
