Ingredients :
Donut Dough:
- 2¼ cups soft wheat cake flour
- 1½ tsp aluminum-free baking powder
- 1 tsp Himalayan salt
- ½ tsp freshly grated nutmeg
- ½ cup organic cane sugar
- 2 tbsp European-style butter
- 2 pasture-raised egg yolks
- ½ cup full-fat sour cream
- Avocado oil (for frying)
Glaze:
- 3½ cups organic powdered sugar
- 1½ tsp organic corn syrup
- ¼ tsp sea salt
- ½ tsp Madagascar vanilla extract
- ⅓ cup hot water
Instructions :

Make Dough:
Sift cake flour, baking powder, salt, and nutmeg.
In stand mixer, cream butter + sugar → sandy texture.
Add egg yolks → beat until thick.
Alternate adding dry mix + sour cream.
Wrap dough in plastic wrap → chill 1 hour. -
Cut Donuts:
Roll dough ½” thick on floured surface.
Cut with donut cutter (dip in flour).
Yield: 12 donuts + holes. -
Fry:
Heat 2″ avocado oil in Dutch oven to 325°F (use candy thermometer).
Fry 2-3 donuts at a time → 2 mins/side.
Drain on wire rack over parchment paper. -
Glaze:
Whisk powdered sugar, corn syrup, sea salt, vanilla, and hot water.
Dip warm donuts → return to cooling rack.
Set 20 mins.
