Peanut Butter Cup Brownies

 

Ingredients:

  • 1/2 cup salted butter, melted and cooled
  • 1 1/2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 9 full-size Reese’s peanut butter cups, unwrapped and chopped

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together melted butter and sugar until smooth.
  3. Add vanilla extract and eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, combine flour, cocoa powder, salt, and baking powder.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  6. Fold in the chopped peanut butter cups, reserving a few pieces for the top.
  7. Pour the batter into the prepared pan and spread evenly. Sprinkle remaining peanut butter cup pieces on top.
  8. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow brownies to cool completely before slicing for clean edges.

Serving Tips

  • For extra fudgy texture, slightly underbake and let them set while cooling.
  • Chill before cutting for neat, bakery-style squares.
  • Serve with a scoop of vanilla ice cream for a richer dessert.

  • Add chocolate chips for extra richness.
  • Swap peanut butter cups with peanut butter chips for a smoother texture.
  • Drizzle melted peanut butter on top before serving.
