3-ingredient strawberry protein muffins

Ingredients:

  • 1 box strawberry muffin mix, zero sugar
  • 1 bottle (11.5 oz) strawberry protein shake
  • 1 cup fresh strawberries, chopped

Instructions:

  1. preheat the oven to 350°f (175°c) and line a muffin tin with paper liners.
  2. in a large mixing bowl, combine the muffin mix and strawberry protein shake. stir until smooth and well blended.
  3. gently fold in the chopped strawberries.
  4. divide the batter evenly among the prepared muffin cups.
  5. bake for 18 to 22 minutes, or until the muffins are set and a toothpick inserted in the center comes out clean.
  6. allow the muffins to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

  • enjoy warm or at room temperature
  • store in an airtight container for up to 3 days
  • pair with yogurt or a smoothie for a balanced breakfast

optional variations

  • add a handful of white chocolate chips for extra sweetness
  • use frozen strawberries if fresh are not available (thaw and drain first)
  • sprinkle a little oats or crushed nuts on top before baking for added texture
