Ingredients:
- 1/2 pound ground breakfast sausage
- 6 large eggs, beaten
- 4 slices sandwich bread
- 4 slices cheddar cheese
- 2 tablespoons butter
- salt and pepper to taste
Instructions:
- in a skillet over medium heat, cook the ground sausage until browned and fully cooked. remove and set aside.
- in the same skillet, pour in the beaten eggs. cook gently, stirring occasionally, until soft and scrambled. season with salt and pepper.
- butter one side of each slice of bread.
- place two slices of bread, buttered side down, in a clean skillet over medium heat.
- add a slice of cheese, a layer of sausage, scrambled eggs, and another slice of cheese on top.
- cover with the remaining bread slices, buttered side up.
- cook until the bread is golden brown, then carefully flip and cook the other side until the cheese is melted and the sandwich is heated through.
- remove from the skillet, let cool slightly, then slice and serve.
