banana greek yogurt loaf

Ingredients:

  • 3 ripe bananas, mashed
  • 2 eggs
  • 1 cup greek yogurt
  • 1/3 cup honey
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions: 

  1. preheat oven to 180°c (350°f) and grease or line a loaf pan.
  2. in a large bowl, mash the bananas until smooth.
  3. whisk in the eggs, greek yogurt, honey, and vanilla extract until well combined.
  4. in a separate bowl, mix the flour, baking soda, cinnamon, and salt.
  5. gradually add the dry ingredients to the wet mixture, stirring gently until just combined. do not overmix.
  6. pour the batter into the prepared loaf pan and smooth the top.
  7. bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  8. allow the loaf to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

serving suggestions

  • serve slightly warm or at room temperature with tea or coffee
  • optionally add a light drizzle of honey or a spread of butter

variations

  • add chopped walnuts or chocolate chips for extra texture
  • swap honey with maple syrup for a deeper flavor
  • use whole wheat flour for a more wholesome version
