Old-Fashioned Southern Tomato Gravy That Soaks Into Every Biscuit

Ingredients:

  • 3 tablespoons butter or bacon grease
  • 3 tablespoons all-purpose flour
  • 1 small yellow onion, chopped
  • 1 (15 oz) can diced tomatoes (fire-roasted recommended)
  • 1/4 cup heavy cream or whole milk (optional)
  • 1/4 cup chicken or vegetable stock
  • Salt and freshly cracked black pepper, to taste
  • Hot sauce, a few dashes (optional)

Instructions:

  1. In a medium skillet, melt the butter or heat the bacon grease over medium heat.
  2. Add the chopped onion and cook until soft and translucent, about 3–4 minutes.
  3. Stir in the flour and cook for 1–2 minutes, forming a roux.
  4. Slowly add the diced tomatoes with their juices, stirring constantly to prevent lumps.
  5. Pour in the stock and cream (if using) and stir to combine.
  6. Bring to a gentle simmer, allowing the gravy to thicken, about 5–7 minutes.
  7. Season with salt, black pepper, and hot sauce to taste.
  8. Serve warm over freshly baked biscuits.
