Ground Beef Sweet Potato & Avocado Bowl

Ingredients:

  • 1 lb ground beef
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, diced
  • 1 egg (for topping)
  • 1–2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 teaspoon paprika (optional)
  • 1/2 teaspoon garlic powder (optional)
  • Red pepper flakes (optional)
  • Fresh herbs (parsley or cilantro), chopped
  • Optional: sour cream or yogurt for topping

Directions:

Roast the sweet potatoes
Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for 25–30 minutes until tender and slightly crispy.

Cook the ground beef
In a skillet over medium heat, cook the ground beef until browned. Season with salt, pepper, and garlic powder. Drain excess fat if needed.

Cook the egg
Poach or fry the egg to your preference. A soft yolk works best.

Assemble the bowl
Add roasted sweet potatoes and ground beef to a bowl. Top with diced avocado.

Finish
Place the egg on top. Sprinkle with red pepper flakes, herbs, and a pinch of salt.

Serve
Add a dollop of sour cream or yogurt if desired. Serve warm.

  • Avoid overcrowding the pan for better caramelization
  • Use ripe avocado for a creamy texture
  • A runny egg yolk adds extra richness
