Pizza enchiladas

Ingredients:

for the filling:

  • 1 lb lean ground beef
  • 1 cup diced yellow onion
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup sliced pepperoni (optional)

for assembly:

  • 8–10 flour tortillas
  • additional shredded mozzarella for topping
  • grated parmesan (optional)
  • chopped fresh basil or parsley for garnish

Instructions:

  1. preheat oven to 180°c (350°f).
  2. in a skillet over medium heat, cook ground beef and diced onion until beef is browned and onions are soft. drain excess fat.
  3. add garlic, oregano, basil, salt, and pepper. cook 1–2 minutes until fragrant.
  4. stir in pizza sauce and 1 1/2 cups mozzarella cheese until well combined. remove from heat.
  5. lay out a tortilla, spoon 1/4–1/3 cup of the beef mixture onto the center, add a few pepperoni slices if using, then roll tightly. repeat with remaining tortillas and filling.
  6. place rolled enchiladas seam-side down in a greased baking dish.
  7. top with remaining mozzarella and parmesan cheese.
  8. bake uncovered for 20–25 minutes, until cheese is melted and bubbly.
  9. garnish with fresh basil or parsley before serving.

Serving ideas

  • serve with a side of garlic bread or salad
  • add a drizzle of ranch or hot sauce for extra flavor
  • cut into individual portions for easy serving

Variations

  • swap ground beef with shredded chicken or turkey
  • add sautéed bell peppers or mushrooms to the filling
  • use whole wheat or corn tortillas for a healthier twist
