Chicken Salad with Grapes

Ingredients:

  • 3 cups cooked chicken, diced or shredded
  • 1 cup red seedless grapes, halved
  • 1/2 cup celery, finely chopped
  • 1/3 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Optional:

  • 1/4 cup chopped walnuts or pecans
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Combine Ingredients:
    In a large bowl, add the chicken, grapes, celery, and optional nuts if using.
  2. Make the Dressing:
    In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
  3. Mix:
    Pour the dressing over the chicken mixture and stir until evenly coated.
  4. Chill:
    Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  5. Serve:
    Serve chilled on sandwiches, wraps, lettuce cups, or over a bed of greens.

Notes

  • Use rotisserie chicken for convenience and extra flavor.
  • Adjust mayonnaise to your preferred creaminess.
  • Add a touch of honey for a slightly sweeter flavor.
  • Store in the refrigerator for up to 3 days.
