Lazy Enchiladas

Ingredients:

  • 1 tablespoon olive oil
  • 1 lb ground beef or shredded cooked chicken
  • ½ cup onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) enchilada sauce
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • Salt and black pepper to taste
  • 2 cups tortilla chips or torn corn tortillas
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions:

1. Preheat the Oven
Preheat oven to 375°F (190°C) and lightly grease a baking dish.

2. Cook the Meat
Heat olive oil in a skillet over medium heat. Add the ground beef (or chicken) and cook until browned. Stir in diced onion and cook until softened, about 3–4 minutes. Add garlic and cook for 1 minute.

3. Add Sauce and Seasoning
Stir in enchilada sauce, diced tomatoes, chili powder, cumin, salt, and pepper. Let simmer for 5 minutes.

4. Assemble the Dish
Spread a layer of tortilla chips or torn tortillas in the baking dish. Top with half of the meat mixture, then sprinkle with cheese. Repeat layers once more.

5. Bake
Bake for 20–25 minutes, or until bubbly and the cheese is melted.

6. Cool and Serve
Let sit for 5 minutes before serving.
