Lemon Oatmeal No-Bake Cookies

Ingredients:

  • 2½ cups quick oats
  • ¾ cup granulated sugar
  • ½ cup unsalted butter
  • ¼ cup milk
  • ¼ teaspoon salt
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the oats
    Place the quick oats in a large mixing bowl and set aside.
  2. Make the syrup base
    In a medium saucepan over medium heat, combine the butter, sugar, milk, and salt. Stir constantly until the butter melts and the mixture comes to a gentle boil.
  3. Boil briefly
    Allow the mixture to boil for about 1 minute, stirring frequently. This step helps the cookies set properly.
  4. Add flavorings
    Remove from heat and quickly stir in the lemon zest, lemon juice, and vanilla extract.
  5. Combine with oats
    Pour the hot mixture over the oats and stir until everything is well coated.
  6. Shape the cookies
    Drop spoonfuls of the mixture onto parchment paper or a lined baking sheet.
  7. Let set
    Allow the cookies to cool and firm up at room temperature for about 20–30 minutes.
