Ingredients:
- 4 cube steaks (about 1 1/2 pounds total)
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 large eggs
- 1 cup buttermilk
- Vegetable oil (for frying)
For the Gravy
- 1/4 cup pan drippings (or butter)
- 1/4 cup all-purpose flour
- 2 cups milk
- Salt and black pepper to taste
Instructions:
1. Prepare the Coating
In a shallow bowl, mix flour, cornstarch, salt, pepper, garlic powder, and paprika.
2. Make the Wet Mixture
In another bowl, whisk together eggs and buttermilk.
3. Dredge the Steaks
Dip each cube steak into the flour mixture, then into the egg mixture, and back into the flour mixture. Press the coating firmly onto the meat.
4. Fry the Steaks
Heat about 1/2 inch of oil in a large skillet over medium-high heat.
Fry steaks 3–4 minutes per side until golden brown and cooked through.
Remove and place on paper towels to drain.
5. Make the Gravy
In the same skillet, leave about 1/4 cup drippings. Stir in flour and cook for 1–2 minutes until lightly browned.
Gradually whisk in milk, stirring constantly until thickened.
Season with salt and black pepper.
6. Serve
Pour the gravy over the fried steaks and serve hot.
