Ingredients:
For the Wontons
- 24 wonton wrappers
- 2 roasted poblano peppers, peeled and chopped
- 1 cup shredded Monterey Jack or Oaxaca cheese
- 2 tablespoons cream cheese, softened
- 1 tablespoon finely chopped onion
- 1 teaspoon minced garlic
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
For the Jalapeño Soy Sauce
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 small jalapeño, finely chopped
- 1 teaspoon honey or sugar
- 1 teaspoon minced garlic
Instructions:
1. Prepare the Filling
In a mixing bowl, combine the chopped roasted poblano peppers, shredded Monterey Jack or Oaxaca cheese, cream cheese, onion, garlic, cumin, salt, and black pepper. Mix well until the filling is evenly combined.
2. Fill the Wontons
Place a wonton wrapper on a clean surface. Add about one teaspoon of filling to the center. Lightly brush the edges with water, fold the wrapper into a triangle, and press firmly to seal. Repeat with the remaining wrappers and filling.
3. Heat the Oil
Heat oil in a deep skillet or pot to 350°F (175°C). Make sure there is enough oil for the wontons to float while frying.
4. Fry the Wontons
Carefully add the wontons to the hot oil in small batches. Fry for 2 to 3 minutes, turning occasionally, until they become golden brown and crispy. Remove them with a slotted spoon and place on paper towels to drain excess oil.
5. Prepare the Jalapeño Soy Sauce
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, chopped jalapeño, honey or sugar, and minced garlic until well combined.
6. Serve
Serve the crispy wontons hot with the jalapeño soy dipping sauce on the side.
