Amazing Old Fashioned Rice Pudding

 

Ingredients:

  • 2/3 cup Minute Rice
  • 2 3/4 cups milk
  • 1/3 cup sugar
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg, lightly beaten
  • Ground cinnamon or nutmeg for garnish (optional)
  • Raisins (optional)

Instructions:

1. Cook the Rice
In a medium saucepan, combine the Minute Rice and 2 cups of milk. Cook over medium heat, stirring occasionally, until the mixture begins to thicken.

2. Add Sugar and Butter
Stir in the sugar, butter, and salt. Continue cooking for a few minutes while stirring.

3. Temper the Egg
In a small bowl, mix the beaten egg with the remaining 3/4 cup milk. Slowly add a small amount of the hot rice mixture into the egg mixture while stirring continuously to prevent the egg from cooking too quickly.

4. Combine and Cook
Pour the egg mixture back into the saucepan. Cook over low heat, stirring constantly, until the pudding becomes thick and creamy.

5. Add Flavor
Remove from heat and stir in the vanilla extract and raisins if using.

6. Serve
Spoon the pudding into bowls and sprinkle with cinnamon or nutmeg if desired.
