Shamrock Lasagna

Ingredients:

Crust

  • 36 Oreos, finely crushed
  • 1 stick unsalted butter, melted

Cream Cheese Layer

  • 8 oz cream cheese, softened at room temperature
  • 1 cup powdered sugar
  • 1 tub (8 oz) frozen whipped topping, thawed

Mint Cheesecake Pudding Layer

  • 3 boxes (3.4 oz each) cheesecake instant pudding mix
  • 3 cups cold milk
  • 1 tub (8 oz) frozen whipped topping, thawed
  • 1 teaspoon mint extract
  • Green gel food coloring

Garnish

  • Oreo crumbs
  • Whipped topping
  • Maraschino cherries
  • Green sprinkles

Instructions:

1. Prepare the Crust

Preheat the oven to 375°F (190°C).

In a large mixing bowl, combine the crushed Oreos and melted butter. Mix with a fork until the texture resembles wet sand.

Press the mixture firmly into the bottom of a 9×13-inch baking dish, making sure it reaches the corners and forms an even layer.

Bake the crust for 8–10 minutes. Remove from the oven and allow it to cool completely to room temperature.

2. Make the Cream Cheese Layer

In a large mixing bowl, beat together the softened cream cheese, powdered sugar, and one tub of whipped topping using an electric mixer until smooth and fully combined.

Spread the mixture evenly over the cooled Oreo crust and smooth it flat using a rubber spatula.

3. Prepare the Mint Cheesecake Layer

In a separate bowl, whisk the cheesecake pudding mixes with the cold milk on low to medium speed until thickened and fully combined.

Add the remaining tub of whipped topping and mix until smooth.

Stir in the mint extract and add green gel food coloring until the desired shade of green is reached.

Spread the pudding mixture evenly over the cream cheese layer.

4. Chill the Dessert

Place the dish in the refrigerator and chill for at least 4–6 hours, or overnight, until fully set.

5. Garnish and Serve

Before serving, sprinkle Oreo crumbs over the top. Cut into squares and garnish each piece with whipped topping, a maraschino cherry, and green sprinkles.

Serving Tips

  • For clean slices, use a sharp knife and wipe it clean between cuts.
  • Chilling overnight gives the best texture and flavor.
  • Keep refrigerated until ready to serve.

Optional Variations

  • Replace Oreos with chocolate graham crackers for a milder chocolate crust.
  • Add mini chocolate chips to the mint layer for extra texture.
  • Top with crushed mint chocolate candies for a stronger mint flavor.
