Ingredients:
For the Beef Filling
- 1 pound ground beef
- 1 ounce taco seasoning
- 2/3 cup water
For the Burritos
- 4 burrito-size flour tortillas
- 2 cups Mexican or Spanish rice (cooked)
- 1 can (15 oz) nacho cheese sauce
- 4 tablespoons creamy chipotle sauce
- 4 tablespoons sour cream
- 1 cup tortilla strips
- 2 cups Mexican blend shredded cheese
Instructions:
1. Cook the Beef
In a skillet over medium heat, cook the ground beef until browned. Drain excess grease if needed.
Add taco seasoning and water, stir well, and simmer for about 3–5 minutes until thickened.
2. Warm the Tortillas
Heat tortillas briefly in a skillet or microwave so they are soft and easy to fold.
3. Assemble the Burritos
Lay a tortilla flat and add:
- A scoop of Mexican rice
- A portion of seasoned beef
- A few tablespoons of nacho cheese sauce
- 1 tablespoon creamy chipotle sauce
- 1 tablespoon sour cream
- A handful of tortilla strips
Fold the sides inward and roll tightly into a burrito.
4. Add the Grilled Cheese Layer
Sprinkle about 1/2 cup shredded Mexican blend cheese directly onto a hot skillet.
Place the burrito seam-side down on top of the cheese.
Cook for 1–2 minutes until the cheese melts and forms a crispy layer on the tortilla.
5. Serve
Remove carefully from the skillet and serve immediately while hot and cheesy.
Tips for Best Flavor
- Use freshly cooked Mexican rice for the best texture.
- Add extra chipotle sauce if you prefer a spicier burrito.
- For extra crunch, add more tortilla strips just before serving.
