Fresh Green Beans & Potatoes

 

Ingredients:

2 lbs fresh green beans, trimmed
2 russet potatoes, diced into 1-inch cubes
1/2 onion, diced
3 cups chicken broth or water
2 tablespoons butter
1 teaspoon garlic powder
Salt and black pepper, to taste
1/2 teaspoon smoked paprika (optional)
4 slices bacon, cooked and crumbled (optional)

Instructions:

1. Prepare the Vegetables
Wash and trim the green beans. Dice the potatoes into 1-inch cubes and chop the onion.

2. Cook the Potatoes
In a large pot, add the diced potatoes and chicken broth (or water). Bring to a boil over medium-high heat and cook for about 5 minutes.

3. Add Green Beans and Onion
Add the green beans and diced onion to the pot. Reduce the heat to medium and simmer for 15–20 minutes, or until the vegetables are tender.

4. Season the Dish
Stir in the butter, garlic powder, salt, pepper, and smoked paprika if using. Mix well until the butter melts and coats the vegetables.

5. Finish and Serve
If desired, sprinkle the crumbled bacon over the top before serving.

Serving Suggestions

Serve warm as a side dish with roasted chicken, grilled steak, or pork chops. This dish also pairs well with cornbread or biscuits.
