Ingredients:
1 1/2 pounds Italian sausage (mild or hot)
2 tablespoons olive oil
2 large bell peppers, sliced (any color)
1 large red bell pepper, sliced
2 large onions, sliced
3 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes (optional)
1/2 cup chicken broth or white wine
Salt and black pepper to taste
Instructions:
- Heat olive oil in a large skillet over medium heat. Add the Italian sausages and cook until browned on all sides, about 6 to 8 minutes. Remove from the skillet and set aside.
- In the same skillet, add the sliced onions and peppers. Cook over medium heat for 8 to 10 minutes, stirring occasionally, until softened.
- Add the garlic, oregano, basil, and crushed red pepper flakes. Cook for 1 minute until fragrant.
- Pour in the chicken broth or white wine to deglaze the pan, scraping up any browned bits from the bottom.
- Return the sausages to the skillet. Cover and reduce heat to low. Let everything simmer for 20 to 25 minutes, until the sausages are fully cooked and the vegetables are tender and slightly caramelized.
- Season with salt and black pepper to taste.
