Easy Hobo Casserole

Ingredients:

  • 1 lb ground beef or ground turkey
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 1 ½ cups shredded cheddar cheese
  • Salt and black pepper, to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if needed.
  3. Add chopped onion and garlic to the skillet and cook until softened, about 2–3 minutes. Season with salt and pepper.
  4. In a small bowl, whisk together the cream of mushroom soup and milk until smooth.
  5. Layer half of the sliced potatoes in the prepared baking dish. Spread half of the meat mixture over the potatoes.
  6. Pour half of the soup mixture on top and sprinkle with some shredded cheese.
  7. Repeat layers with remaining potatoes, meat, soup mixture, and cheese.
  8. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15–20 minutes, or until potatoes are tender and cheese is bubbly and golden.
  9. Let rest for 5–10 minutes before serving.

Serving Suggestions

Serve with a simple green salad or steamed vegetables for a complete meal.
