Roasted Jalapeño Cowboy Cream Cheese Dip

Ingredients:

  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • 2–3 jalapeños, roasted, peeled, and finely chopped
  • ½ cup shredded cheddar cheese
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 tablespoon fresh chives or green onions, finely sliced
  • Salt and black pepper, to taste

Instructions:

  1. Roast the Jalapeños
    Place whole jalapeños under a broiler or over an open flame, turning until skins are charred and blistered. Transfer to a bowl and cover for 10 minutes to steam. Peel off the skins, remove seeds if milder heat is preferred, and finely chop.
  2. Mix the Base
    In a medium bowl, beat the softened cream cheese until smooth. Add sour cream and mix until creamy and fully combined.
  3. Add Flavor
    Stir in chopped roasted jalapeños, shredded cheddar, garlic powder, onion powder, chives, salt, and pepper. Mix until evenly incorporated.
  4. Chill
    Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  5. Serve
    Transfer to a serving bowl and garnish with extra chives if desired.

Serving Suggestions

  • Serve with tortilla chips, pretzels, or toasted baguette slices
  • Spread on burgers or sandwiches
  • Use as a baked potato topping

Optional Variations

  • Add crumbled cooked bacon for a smoky twist
  • Mix in a squeeze of fresh lime juice for brightness
